Esmeralda joined Beachside in 2017 as the Director of Nutrition & Food Services/ Registered Dietitian. Prior to coming to Beachside, Esmeralda worked as a clinical dietitian in Culver City, California where she worked in the Intensive Care and Rehabilitation units. She is a member of the Academy of Nutrition and Dietetics and the Institute of Food Technologists. Esmeralda received her Bachelor’s and Master’s degrees in Nutritional Science from California State University, Long Beach. Her supervised practice emphasized on nutrition across the lifecycle. When Esmeralda isn’t providing medical nutrition therapy, she enjoys traveling the world and walking her dogs, Virginia Woof and Bark Ruffalo.
